The Back Alley – Lem Butler
A quiet rebellion, steeped in flavor. An elegant interplay of spice, citrus, and espresso. The recipe was developed by Lem Butler, longtime specialty coffee professional and 2016 U.S. Barista Champion.
Ingredients
- 2 shots espresso (split)
- Unsweetened Almond Milk
- 8 g brown sugar (4 g per glass)
- 2 cinnamon sticks
- 1 Fresh orange peel
Instructions
Step 1
Place 4 g of brown sugar into each glass.Step 2
Steam almond milk until silky and pour over the sugar. Allow the base to deepen into a rich brown layer beneath the pale, airy almond milk.Step 3
Set a cinnamon stick in each glass, aligning them with the spouts of the portafilter.Step 4
Pull the espresso shot so it flows down the cinnamon sticks, sliding beneath the almond milk and settling into a hidden layer of depth.Step 5
Express the oils of fresh orange peel over the top, then rim the glass with its zest.Step 6
Use the cinnamon sticks to stir and unite the layers; the more you stir, the warmer and spicier the flavor becomes.
