Dairy-Free Berry Croissant French Toast Bake


  • 1 tsp coconut oil melted
  • 1 1/2 cup Pacific Foods Hazelnut Unsweetened Original
  • 6 eggs
  • 1 tbsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 3 tbsp maple syrup
  • 1/2 tsp sea salt
  • 9-10 croissants cut into large pieces
  • 1 cup fresh berries
  • 2 peaches sliced
  • 1/2 cup dairy-free yogurt
  • 1/4 cup powdered sugar to serve


  1. Step 1
    Grease a large and deep baking dish with coconut oil.
  2. Step 2
    In a large bowl, whisk together hazelnut plant-based beverage, eggs, vanilla, spices, sea salt, and maple syrup.
  3. Step 3
    Gently dip sliced croissants into the egg mixture and arrange in prepared baking dish. Repeat with the remainder of the croissants adding pieces overtop.
  4. Step 4
    Pour any remaining egg mixture overtop of arranged croissants. Cover and let sit in the refrigerator for 30 minutes (or overnight) to absorb some of the liquid.
  5. Step 5
    When ready to bake, preheat oven to 375 degrees Fahrenheit.
  6. Step 6
    Bake croissant french toast for 35-40 minutes, or until top is golden.
  7. Step 7
    Remove croissant french toast from oven and top with sliced fresh berries and peaches. Serve with nondairy yogurt of choice, maple syrup, and powdered sugar. Enjoy
